Why not? There are some restaurants in the area that already do that, like Cosmopolitan in Alexandria, VA.

Some butcher shops like "Meat on the Avenue", on Mt Vernon Avenue sell cevapcici you can grill yourself.

Perhaps it would be too ambitious to sell exclusively cevapis, but as an addition to international or ethnic cuisine, I think it would work.
